Keto-Friendly Pepper Pot Soup Recipe
First a little information about Tripe. Tripe is cow abdomen and is an ingredient found in many cuisines around the world. Tripe is great for grilling, stewing, and deep-frying. Tripe soup is popular in Eastern Europe, Latin America and can be found in various versions in Asia.
There are three kinds of beef Tripe (blanket, honeycomb, and book tripe) and let it be known cows have different stomach chambers of which the different types of Tripe can be found. At the market there are two versions of Tripe as some may appear lighter in color than others. The difference in appearance is the result of a bleaching process and nothing to do with the health or age of the animal from which it came.
Ingredients:
1.5 lbs (680g) beef Tripe, cleaned and sliced into thin strips
Note: Honeycomb beef Tripe is tender and is most favorable. Pre-read the cleaning instruction for bleached and unbleached Tripe to help decide which is best for you. This can also be an optional ingredient.
1 lb (450g) beef sirloin, thinly sliced
1 cup (150g) bell peppers, thinly sliced (use a mix of colors for visual appeal)
1 cup (150g) spinach, chopped
1 cup (150g) kale, chopped
1 medium-sized onion, finely chopped
3 minced cloves garlic
1 tablespoon minced ginger
1 olive oil
6 cups (1.5 liters) beef broth
1 teaspoon cayenne pepper (adjust according to your spice preference)
1 teaspoon paprika
1 teaspoon ground black pepper
Salt start with a teaspoon and add more to your liking
Fresh parsley, chopped (for garnish)
Preparing Tripe
Cleaning Unbleached Beef Tripe
You will want to clean unbleached Tripe by cutting off and discarding all unwanted fat and anything that doesn't look like Tripe. Next, rub the tripe all over with rock salt then rinse it with vinegar. Repeat this process until there are no visible impurities. Then using a soft toothbrush pry any dirt out of the crevices and finally, rinse the tripe several times with water.
Cleaning Bleached Beef Tripe
The light color bleached beef Tripe is mostly free from grit and impurities. However, you still need to rinse it in water several times to remove as much of the chlorine that it was bleached with. Otherwise, chlorine that has been left behind can leave a nasty odor that taste will permeate your cooked dish.
Boil the tripe for about 30-40 minutes until tender. Drain and set aside.
Prep ingredients by cleaning and preparing in small bowls
Clean rinse the spinach and kale – dry and chop into ½’ sections
Slice the bell pepper in to thin ¼” slices
Finely chop the medium onion
Mince the ginger
Prepare the garlic cloves and mince
Prepare the Beef Sirloin
slice the beef sirloin into thin strips
In a large pot, heat the olive oil over medium heat watch for a shimmer
Add the sliced beef sirloin and cook until browned on all sides
Tip: The use of tongs helps to rotate and stir the meat
Remove from the pot and set aside
Sauté Aromatics
In the same pot using the beef juices and brown bits, add the chopped onion and cook until onion starts to soften, add minced garlic Sauté for one minute then add the minced ginger and Sauté until the onion is translucent.
Combine Ingredients
Add the tripe, bell peppers, spinach, and kale to the pot. Stir well.
Add Broth and Seasonings
Pour in the beef broth and bring the soup to a simmer
Add cayenne pepper, paprika, black pepper, and salt to taste. Adjust the seasonings according to your preference
Time to Simmer
Let the soup simmer for 15-20 minutes to allow the flavors to meld and the vegetables to cook.
Add Cooked Beef
Return the cooked beef sirloin to the pot.
Simmer for an additional 5-10 minutes until the beef is heated through
Serve
Ladle the soup into bowls, and garnish with chopped fresh parsley.
